Cassava Noodles on a creamy medley of mushrooms, kale and brown lentils

I’ve been looking for creative ways to eat more plant based meals especially for dinner and gradually, day by day, I am getting there. It is a personal choice to avoid meat for dinner and I must say I feel lighter in the mornings. I don’t know if no meat for dinner is the reason for the lightness but I notice this when I don’t have meat for dinner. And I have to say the more plant based meals I have for dinner, the better and regular my bowel movement is and I am sure to have at least one or two bowel movements daily.

This is a bit of a naughty dish but oh so yummy!!!

Cassava is gluten free and the lentils are also naturally gluten free.

Ingredients for the cassava Noodles:

Onion

Red bell pepper

Carrots

Green beans

Coconut oil (used for cooking) Olive oil is also good.

Garlic & Herb Stock

I made a stir-fry of onions, red bell pepper, green beans and carrots and seasoned them with fried rice spice, added a bit of Nigerian Chilli Powder and then added the stock followed by the cassava noodles. This turned out juicy on its own and could be great as a salad alone.

For the Creamy Medley:

Onion

Garlic

Red chili

Mushrooms

Fresh Kale

Old Brown Sherry

Butter

Coconut oil

Brown lentils

I soaked the lentils for about 2 hours before cooking.

Finely diced the onion and minced the garlic, added to a hot pan with a bit of coconut oil and butter.

Then added the chopped kale and mushrooms. Sautéed and then added the lentils. Simmer for about 3 minutes then added the sherry on high heat and reduced the heat again to simmer. Then added cream, fresh oregano and fresh chives. Simmer for about 2 minutes then turn the heat off but leave the saucepan on the stove.

Serve the creamy medley then place the noodles on top and garnish with fresh oregano and chives, and fresh pomegranate.

I garnished with fresh pomegranate because I wanted a fruity flavour and crunchy texture when eating. The pomegranate bursts in the mouth and goes very well with the noodles and creamy medley. The sherry did it’s job very well too 😜.

This is a lovely, naughty vegetarian meal which I absolutely loved!!

And I had seconds!!!!

The sherry adds an amazing light sweetness and flavor to the creamy medley and then the cream just adds some heaven!!!

I’m really avoiding the temptation to go for 3rds!!! 😩😩

Yes, meatless meals, plant based meals can be yummy!!!
