This bread has a bit of digestive bran and flax meal. It is nut free.
3 Overripe Bananas
1/4 Cup Full Cream Milk
120ml Melted Butter
1 teaspoon vanilla essence
2 Cups Cake Wheat Flour
1 cup white sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon digestive bran
1/4 teaspoon flax meal
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Optional: Mixed seeds, chocolate chips, dried cranberries and one fresh banana for garnish.
In bowl 1:
Mash the bananas. Add the eggs, vanilla essence, milk then butter. Mix.
In bowl 2:
Add the flour, flax meal, cinnamon, nutmeg, baking soda, baking powder, salt and sugar. Mix.
Add the dry ingredients to the wet ingredients. Mix until all ingredients are well combined.
Grease a loaf pan – I spray with Cook & Spray.
Pour the mixture into the pan. Garnish if desired. I garnished with a fresh banana that’s not overripe and sprinkled dried cranberries, chocolate chips, and mixed seeds.
Bake at 190° for 45-55 minutes or until you insert a skewer and it comes out clean. Rest the bread in the pan for 10-15 minutes. Remove from the pan then let the bread cool off for 15 minutes before serving.
